The temperature difference between day and night promotes slow and complete ripening of the grapes, resulting in intense aromas and balanced acidity. The harvest takes place at night to protect the freshness of the grapes. The vinification process includes cold maceration with the skins, gentle pressing, and the clarification of the must to ensure its purity. The wine rests on its fine lees for 3 to 4 months, adding body and a silky smoothness without sacrificing the varietal freshness of the Verdejo.
