Marinated anchovies - Tambourine

We select the best fresh anchovies from our ports and clean them until all impurities are removed. Then we give them just the right amount of time in a mixture of wine vinegar, lemon, and salt and preserve them in olive oil. The result is anchovy fillets with a mild flavor and low salt content, natural color, and a fleshy and delicate texture. The best packaged marinated anchovies are ideal for accompanying fish recipes.
