Aalto PS (Selected Payments), made with tinto fino, is a wine of the highest quality, almost like a collector's item, a gem from Ribera del Duero.
In 1999, Mariano García started this project with Javier Zaccagnini in Ribera del Duero with the aim of making a wine of very high quality that reflects the diversity of terroirs in this Denomination of Origin.
Aalto PS is made from 100% Tinto fino variety. The grapes are selected from vineyards in La Horra, La Aguilera, and Fresnillo, generally with vine ages ranging from 80 to 100 years. Manual harvest in 15 kg boxes and carefully inspected on a selection table. Alcoholic fermentation takes place in concrete, wood, or stainless steel tanks depending on the vintage.
Average aging of 20 months in new French oak barrels.
Aalto PS is ideal to accompany Iberian acorn-fed ham, game birds, stews, and roasts.
It is recommended to serve at a temperature between 16 and 18ºC.
