Sierra Cantabria Cuvee is a red wine from the La Rioja D.O. made by the Sierra Cantabria winery. Elegant and fresh. At the foot of the Sierra de Sonsierra, and in the heart of the Rioja D.O., the wines of this winery are born, built by the brothers Marcos and Miguel Eguren with the stone of the land.Sierra Cantabria Cuvee is a single varietal of Tempranillo. Fermentation: Traditional elaboration, 100% destemmed. Alcoholic fermentation for 8 days with selected yeast, temperature control between 28 and 32 ºC. Maceration: Pre-fermentation cold maceration (48 hours) and post-fermentation maceration with the skins for 20 days. Vigorous pump-overs twice a day until fermentation is complete. During maceration, the frequency of pump-overs is decreased as the process progresses, to avoid the extraction of vegetal and bitter characters, ending with a gentle pump-over every two days.
Aging, Stabilization: Barrel: 14 months in Bordeaux barrels of French oak (40%) and American oak (60%) since November 2001. 4 months in new French oak barrel toasted "Medium +". Rackings every four months. Bottle: Bottled in May 2004.
Sierra Cantabria Cuvee is ideal to accompany red meats, roasts, stews, all kinds of game, well-aged cheeses, blue cheeses, and foie gras.
It is recommended to consume at a temperature between 14 and 16ºC.
