Viñas del Vero is one of the legendary wineries in Somontano, where they produce their wines.
Viñas del Vero Cabernet Sauvignon begins with the harvest of the Cabernet, which took place during the cool early mornings of the 3rd week of October. After destemming and crushing the grapes, the harvest was refrigerated before being placed in vats, where the must remained in contact with the skins for three days before starting fermentation.
After fermentation, the wine was obtained and after two rackings, it was transferred to French oak barrels where it rested for 10 months. It was then returned to a tank where it was filtered before being bottled, where the aging process continued.
Recommended pairings include carpaccio, cheeses, and red meats cooked on stone or game meats.
It is recommended to consume this red wine at a temperature between 16 and 18ºC.
