  • If the lacón is not desalinated, soak it in cold water for at least 24 hours, changing the water several times to remove excess salt.

2. Cooking the Lacón:

  • In a large pot, place the desalinated lacón and cover it with cold water.
  • Add the bay leaves and bring the water to a boil.
  • Cook over medium-low heat for approximately 1.5 to 2 hours, or until the lacón is tender. If you decide to include chorizo, add it during the last 30 minutes of cooking.

3. Preparing the Potatoes and Grelos:

  • While the lacón is cooking, peel the potatoes and cut them into large pieces.
  • When the lacón is almost ready, add the potatoes to the pot and cook for an additional 20 minutes, or until they are tender.

4. Assembling the Dish:

  • Drain the lacón, potatoes, and grelos, and place them on a large platter.
  • Drizzle with oil, salt, and paprika.
  • Serve hot, accompanied by good Galician bread to enjoy the juices.
