A Torna Dos Pasas Escolma is a red wine made with Brancellao, Caíño Longo, Ferrol and Caíño Redondo, from the oldest vines in the winery, planted on slopes on sandy-siliceous soils.
The harvest is manual. Each variety undergoes fermentation with native yeasts separately in stainless steel tanks. It is aged for 12 months in new French oak barrels. The wine is aged in the bottle for a minimum of 3 years before going on the market.
