Soul de Saa 2019 is an exceptional red wine that comes from the Denomination of Origin Ribeiro, produced by the winery Lagar de Sabariz. This wine is a blend of four native grape varieties from the region: Caíño Tinto, Souson, Brancellao, and Mencía. Sourced from ancient micro-vineyards located in the village of Saa, the blend of Soul de Saa is harvested from vines that grow on terraces with xabre soils, following a biodynamic farming approach that respects the local ecosystem. The vinification of Soul de Saa is meticulous. Manual selection of the grapes is performed, with around 40% being destemmed. The grapes are treated in a traditional manner, being foot-trodden and naturally fermented in tanks. After fermentation, the wine is bled off and matured in French oak barrels with five years of use, where malolactic fermentation also takes place. This process is executed without filtration, clarification, or stabilization, ensuring the wine's purity and avoiding the addition of sulfites. On tasting, Soul de Saa presents a deep ruby color, exuding an aromatic profile that blends juicy wild fruits with the spices that provide warmth and an enveloping character. On the palate, the wine's silky texture, along with carefully controlled tannins, fosters a remarkable balance and a long, deep finish that reveals layers of flavor in every sip. The sensory experience is enriched by notes of incense that emerge at the end, leaving a memorable impression of this unique wine.
