Agustí Torelló Mata Rosat Trepat is an organic and vegan rosé cava made exclusively from Trepat grapes from the Ubac estate, located in Sant Joan de Mediona, in the area of Valls d'Anoia-Foix, Counties of Barcelona. The vineyards, located at an altitude of 500 metres above sea level on slate soils, are cultivated in a mountain viticulture environment, respecting the natural ecosystem as much as possible. Harvesting is manual, and the vinification process uses vegetable-based fining agents, complying with vegan certification standards.
To enhance the genuine expression of the grapes and the soil of origin, the wine is made with selected yeasts before the harvest and with a maceration of 8 hours. Subsequently, the must ferments at 16 °C for 28 days, seeking to reflect the personality of the Trepat grape in this cava. Bottle ageing is carried out on the lees for 2 years in natural cellars at 17 °C, to offer exceptional complexity and finesse. Finally, the disgorging (when the lees are removed) and the final corking seal the result after its long rest in the dark.
This cava has an attractive cherry red colour, clean and bright.
On the nose, it offers subtle notes of red summer fruits, such as watermelon, cherry and raspberries.
On the palate, it stands out for its freshness and perfectly balanced acidity that give it structure and vivacity. It is ideal to accompany appetizers, starters, snacks, and appetizers.
