Elaboration
To make this Añares Terranova White Wine, a fermentation is carried out with grapes from the highlands of the D.O Rueda region. Selective and manual harvesting is done to achieve the correct ripeness and acidity. Once in the winery, the grapes are selected and enter the fermentation process at a controlled temperature of 15 ºC.
This process is carried out to ensure the varietal expression of the aromas of the Verdejo grape variety. Finally, the wine is clarified and stabilized before being bottled.
Verdejo, the variety of D.O Rueda
The star variety of the D.O is believed to have arrived in the Iberian Peninsula from North Africa and was planted in the Toro and Rueda regions during the reign of Alfonso VI. The vines of this variety are not very vigorous and have an average productivity. The clusters are small, resistant to drought and extreme climates, producing wines with an alcoholic degree of around 12-13 degrees.
Bodegas Olarra
The origins of this winery come from a building, a work by Juan Antonio Ridruejo in 1973, designed and conceived for wine. The most emblematic feature is its roof that crowns the barrel room, which is formed by 11 hexagonal domes that help prevent sudden temperature changes.
