At the micronutrient level, Asturian fabada is a great source of interesting elements:
- Calcium, magnesium, and phosphorus for good bone health, harmonious growth in children, or a strong structure in old age. Every 100 grams provides 143 mg of calcium, 408 mg of phosphorus, and 141 mg of magnesium.
- Iron (8.3mg per 100 grams of fabas) is ideal for preventing and treating anemia.
- Selenium (3.3 mg), zinc (2.9 mg), and phytosterols have antioxidant and anti-aging properties, and are good cholesterol controllers.
One of the most important qualities of Asturian faba is its richness in fiber (25 grams per 100 grams), which provides cardiovascular benefits for a very interesting reason: fiber. By promoting intestinal transit, fiber prevents cholesterol from being fully absorbed, resulting in a lower amount reaching our veins and being healthier.
Additionally, this high amount of fiber has anticancer and protective properties for the large intestine, as it helps eliminate toxic substances and heavy metals.
