The Castle San Diego Rosé wine is a wine from the Jerez region in Andalusia, Spain. It is a wine made with red grapes and is characterized by its freshness, smoothness, and intense pink color.
This rosé wine is the result of a careful selection of Tempranillo grapes, grown in vineyards near the San Diego castle, located in the heart of the Jerez region. The grapes are hand-harvested and selected to ensure the quality of the final product.
The process of making the Castle San Diego Rosé wine begins with a cold maceration of the grapes for several hours, allowing the extraction of aromas and flavors from the grape skins. After maceration, the grapes are gently pressed and fermented in stainless steel tanks at a controlled temperature of 16-18°C for a period of 10 to 15 days. During fermentation, periodic pump-overs are done to extract more color and aroma.
Once fermentation is complete, the wine is racked to another tank where a second malolactic fermentation takes place, helping to soften the wine and provide greater complexity. After malolactic fermentation, the wine is filtered and bottled.
