Bascois is a red wine elaborated in Carbellada de Valdeorras with varieties such as 40% Mencía, 20% merenzao, 10% garnacha tintorera, the remaining 30%: brancellao, grao negro, ferrón and sousón by the Adega O Cabalin winery.
The winemaking process begins with the manual harvesting of the grapes in 15 kg boxes. Fermentation is then carried out in an open barrel of 500 litres, using indigenous yeasts and adding 30% of stems, which are crushed in the traditional way. The rest of the grapes are destemmed without crushing.
After fermentation, the wine is aged for 12 months in a 225-litre barrel.
All the grapes used come from a plot located at an altitude of 975 metres above sea level and facing north. This plot sits on shallow slate soil. The vines were planted in 1910 on a gently sloping hillside. The altitude of the plot is 800 metres. It is located in the municipality of Carballeda de Valdeorras, in the V-shaped valley formed by the Casoio river, a tributary of the Sil. The viticulture is carried out organically, although it is not certified.
The wine has a cherry red colour with a light robe, which indicates its youth.
In terms of aroma, it has a fresh and jovial profile, with balsamic notes of pine and the crisp presence of fresh red fruits, such as raspberries. On the other hand, the black and blue fruit is ripe and lush, with notes of blackberries and plums.
On the nose, the essences of blue flowers intertwine with black liquorice, evoking memories of velvet and smoky touches, giving depth to the whole. In addition, nuances of toasted caramel, the meatiness of hummus and cherry liqueur can be appreciated, contrasting with subtle notes of leather goods. This aromatic complexity unfolds gradually and surprises with its variety of nuances.
On tasting, the wine enters smoothly but with a sparkling touch. The fruit is perceived as red and crisp, and one can sense the traces of ripe skins and aromatic herbs growing in the soil. The slight bitterness of these herbs adds flavour to the whole.
The wine exhibits a balanced and outstanding acidity, great cleanliness and honest tannins. Moreover, its persistence on the palate is remarkable, which is unexpected since throughout the tasting it maintains a jovial, carefree and cheerful profile, which is extremely pleasant.
