TheWhite Wine Biniagual DolÇ from the Biniagual winery, has Denomination of Origin Binissalem (Mallorca), the overripe grapes are harvested in small boxes of 10 to 12 kg, selecting the grapes manually. A cold maceration in carbonic atmosphere is carried out, followed by a soft pressing with carbonic protection at low temperature and a cold racking for 48 hours. Fermentation begins in stainless steel tanks at a controlled temperature of 17 degrees. Halfway through fermentation, the process is interrupted to preserve the sweetness of the wine.
