For the production of this wine, we carry out a series of selections: first of the vineyards, then of the grape clusters, and finally of the barrels. The harvest was done by hand in small 20 kg boxes. Once at the winery, a new selection of the grape clusters was performed on a sorting table.
The grapes used in its production, from vineyards over 80 years old, underwent fermentation separately in 500-liter French oak vats. The fermentation and subsequent maceration lasted for 2 weeks.
Malolactic fermentation and aging were carried out in new French oak barrels from different cooperages, where it remained for 18 months.
At the end of this aging process, the wine was bottled directly without undergoing stabilization or filtration processes.
