Carrasviñas Félix is a white wine made from 100% Verdejo in the D.O. Rueda by Bodegas Félix Lorenzo Cachazo.
The most recent addition to the portfolio of the Valladolid-based winery is also its most poignant wine, created in honour of the company's founder, Félix Lorenzo Cachazo, on his 80th birthday. This limited edition white wine has been classified as a Gran Vino de Rueda, the highest quality category in the Denomination of Origin. It represents a return to the roots of Verdejo. In keeping with Félix's austere and sober personality, this wine is stripped of artifice, genuine and authentic.
Winemaking Process: Fermentation was carried out spontaneously using the natural yeasts present, without temperature control, extending over 10 days. Subsequently, the wine underwent a period of ageing in a ceramic vat with a capacity of 1,600 litres.
Ageing: During a period of 12 months, the wine was aged in the same jar, with stirring practices that initially involved daily movements to suspend the fine lees, progressively reducing to once a month.
In the visual phase, it has a clean and bright straw yellow colour. In the olfactory phase, the complexity is evident, highlighting aromas characteristic of the variety such as white fruit (pear), fennel and citrus (grapefruit), accompanied by notes of thyme, mineral elements and evocations of graphite.
On the palate, the texture is unctuous, with a remarkable richness and complexity. The mineral notes and the distinctive bitterness of the Verdejo are the protagonists, contributing to the elegance and breadth of the wine.
