Elaboration and Aging

After malolactic fermentation, the wine must was introduced into French oak barrels to remain in them for a minimum of 4 months. The barrels have an age range of zero to three years, with 25% new barrels. The fermentation temperature was around 28ºC.

Tasting Note of Cueva del Chamán 2021

• Appearance: Clean in visual phase, with a purple-red color and high color intensity.
• Nose: Clear notes of strawberry yogurt, raspberry, and a background of banana typical of carbonic maceration.
• Pallet: Sweet, fresh, and balanced on the palate, with a medium persistence. Easy to drink with a pronounced fruity character.

Pairing

Ideal for accompanying rice dishes, meats, game, and aged cheeses.

It is recommended to consume this red wine at a temperature of 16ºC.
