Grapes from very old vines of the Parellada variety. Vines over 60 years old, located in our Baltana Vella estate, at 480m above sea level. These vines, planted on small sloping hillsides and with a rather extreme ecological cultivation, produce grapes with a high concentration of aromas and a rather high alcohol content for a Parellada. For several years, the estate is not opened, thus avoiding excess production and a balance of the vine, along with a short pruning and a good green pruning, we make the grapes reach a perfect ripening points
Grapes harvested by hand, in small trailers are transported to a distance of 2 km to the winery. We put it in the closed pneumatic press and press at low pressure. Temperature controlled fermentation with selected yeasts. Aged for 2 months on fine lees in stainless steel tanks
From this vineyard, where we also make the Parellada, we have used part of it to make a Classic Penedès sparkling wine, partly to pay tribute to Font-Rubí's star variety
Tasting notes
In view: Pale white gold colour, greenish and greyish tones, which mark the elaboration that has been done with the minimum intervention of oxygen in the cellar, along with a very elegant fine bubble.
On the nose: It comes out this aroma of aging with a mixture of aromas of dry grass under forest, with an aniseed point.
On the palate: Highlight the fine bubbles, its smooth passage through the mouth, with a refreshing acidity that invites you to continue savoring this sparkling wine, small production that pays tribute to the most planted variety in the area
