Production: Made from grapes from the Serral del Vell estate of Recaredo, located on a small plateau above the Coster del Río Bitlles with abundant limestone nodules in the soil. Organic and biodynamic agriculture. Vineyards cultivated without herbicides or chemical insecticides, only with natural fertilizers. Infusions made from plants are used to control fungus and naturally strengthen the vines. Manual harvest to ensure the excellent health of grapes destined for long aging. Vinification, production, and aging are all done at Recaredo in a commitment to ensure the rigor of the grape's origin and maximum transparency in the production processes. To provide structure and elegance, the xarel·lo must has fermented in oak barrels. The disgorging (the art of removing the lees from the second fermentation in the bottle) is done manually at a cool, natural temperature in the cellars as a professional and environmentally respectful practice.
