We make our anchovies with spring catches from the Cantabrian Sea. We mature and refine them for at least 8 months, and cover them with a fruity extra virgin olive oil with a slight hint of ripe banana. They are characterized by their meatiness, low salt content, and excellent cleanliness.
Anchoas de Santoña Don Bocarte is one of the best canned seafood products. They come from Santoña, one of the areas in Spain with the highest quality fish.
These anchovies are caught during the time when the fish has the highest fat content, which coincides with the months of April, May, and June.
This is one of the reasons why the raw material is of the highest quality, although it is not the only one. The anchovies are artisanally prepared, starting with a first cleaning and washing, followed by approximately six months of salting. Afterwards, all the skin and scales are removed to separate the flesh into two parts and proceed with packaging in olive oil.

The recipe we propose here is very suitable for a light and tasty dinner. In addition to its simplicity and quickness, it can come in handy when you don't know what to cook.
To make this recipe for 2 people, we will need: Fresh bread, 1 can of Don Bocarte anchovies from Santoña, 1 can of pickled anchovies, 1 garlic clove, and jarred parsley.
Cut the bread into toasts of the desired size, not too big to fit in the toaster. Once cut, toast it in the toaster until it is crispy and golden. Then peel the garlic, cut it in half, and poke it with a fork to rub it over the toast so that it absorbs the flavor.
Open the can of anchovies and cover the toast with a layer. Do the same with the pickled anchovies.
Finally, garnish with some jarred parsley and serve to the guests.
This recipe is recommended to be enjoyed with a light sparkling wine or beer, and we also recommend eating a little bit of aged Manchego cheese, which leaves an exceptional final taste.
