Ecliptic is a natural white wine made by Cingles Blaus under the Montsant Designation of Origin. Inspired by the ecliptic —the imaginary line that marks the path of the Sun across the celestial sphere— this wine pays homage to the balance between nature, time, and earth.
Ecliptic is born from the White Grenache, a native variety of Montsant, cultivated with absolute respect for the environment. It is a wine of minimal intervention, without added sulfites and crafted in an artisanal way, reflecting the purity of the terroir and the authentic character of the grape.
The clusters are manually selected to ensure maximum quality. After a gentle destemming and pneumatic pressing, the must ferments spontaneously with native yeasts in stainless steel tanks, at a controlled temperature (max. 17 °C). Subsequently, the wine matures for 10 to 12 months before bottling, without any chemical additives or aggressive filtering.
Color: Intense golden yellow, bright and luminous.
Aromas: Powerful floral and fruity profile, with notes of apple, pear, and hints of yeast that evoke bread or beer, a typical characteristic of wines without added sulfites.
Pallate: Smooth and balanced, with medium acidity and a long persistence. It highlights an elegant oxidative touch accompanied by memories of brioche and fine pastries.
Perfect to accompany Mediterranean cuisine dishes, soft cheeses, rice dishes, or white fish. Serve between 8 and 10 °C to fully enjoy its freshness and complexity.
