This extra virgin olive oil shows us an aroma of fresh grass, tomato plant, and artichoke that reminds us of the extensive fields of olive trees in the upper basin of the Guadalquivir River. Transmitting a sense of peace and awakening a unique feeling in us. First night of harvest. The harvest this year was carried out at the end of October. Since October is a month of high daytime temperatures, which in many cases reach up to 30 degrees, the harvest is done at night, thus ensuring that the temperature from obtaining the olives to obtaining their elixir remains constantly below 20 degrees. The harvested olives go through a sorting process, in which those that do not meet the established requirements are discarded.
