Extra Virgin Organic Olive Oil of the Picual variety. Picual Organic oil has a strong personality. It is a highly prized variety due to the early ripening of its fruit, ease of cultivation, and quality of the olive oil obtained, with a high proportion of oleic acid. Picual Organic has a more intense fruity flavor compared to conventional Picual, due to the use of only organic products for the nutrition of the olive trees.

THE MANUFACTURING PROCESS

The fruit is harvested with great care through a selection process. Numerous tests are carried out in the different areas of the estate from the moment the fruit begins to ripen until the determination of the ideal zone and time for harvesting. Harvesting takes place between October 1st and 15th, depending on the year and fruit development. Due to the fact that October temperatures reach around 30ºC during the day, the fruit is harvested at night to ensure that the harvesting temperature and subsequent milling are below 20ºC.

The production of the best Extra Virgin Olive Oil is more than a technique, it is a ritual. Without temperature fluctuations and at the appropriate temperature from fruit extraction to the extraction of its elixir.

SENSORY PROFILE

Very intense fruity aroma of green olives, and very complex, with notes of fig tree, grass, stem, alloza, citrus, and tomato plant. On the palate, it is sweet at first, moderately bitter and slightly spicy, all very well balanced.
