TRADITIONAL CULTIVATION OLIVE TREES. Our recovered olive groves, scattered in small plots in the Sierra de Altomira, are entirely of organic farming and a variety ú nica and authontic of the region.natural Alcarria: the variety Verdeja or Castellana.

A FRESH JUICE. The olive always collected on the fly is milled in the same day of collection, the fruit reaches the mill intact allowing extremely low acidity levels around 0.1% FLAVOR. Fresh oil on the nose and clean in the mouth, medium fruity with intense notes of tomato and hints of almond, its moderate bitterness and spiciness allow to highlight the flavor of the dishes using it raw and in cooking does not alter the final result of the dish
