TRADITIONAL CULTIVATED OLIVE GROVES. Our recovered olive groves, scattered in small plots in the heart of the Sierra de Altomira, are of a unique and native variety of the region, native to the Alcarria: the Verdeja or Castellana variety.

EXCELLENCE IN PRODUCTION. Our small, but modern mill, allows us to control the extraction process at all times, always applying parameters above the standards defined for the extraction of Extra Virgin Olive Oil.

A FRESH JUICE. The olives harvested always on the fly are crushed on the same day of collection, the fruit arrives at the mill intact, allowing for acidity levels of Extra Virgin Olive Oil well below the established ones.
