The grape harvest that takes place in the "Marco de Jerez" is of utmost importance for the production of Tio Pepe Fine Wine, as autumn and winter in this area are mild, while spring is dominated by high temperatures and flowering occurs. In summer, there is not excessive heat, but there are multiple days of dew, favoring abundant production, so the harvest begins in August.
The Palomino grapes are gently pressed, and the must obtained from this first pressing is known as "yolk must," being the most delicate and elegant.
After fermentation, classification, and fortification of the wine, it enters the "solera," where it will remain approximately four years in American oak casks.
The wine undergoes biological aging under the layer of yeast known as "flor," which gives Tio Pepe Fine Wine a unique color, aroma, and character.
