The San Martiño or San Pedro Gallego is a little known fish but with a magnificent flavour and firm texture that competes with others of higher price, it can be compared with the rodaballo although the San Pedro usually has more bones.
It is known as San Pedro Gallego or San Martiño by the legend in which it is told according to the Gospel of St. Matthew that the two rounded bumps on each side are the fingerprints of San Pedro who by order of God took the fish to get out of his mouth a piece of gold to pay the tribute of the temple.
San Pedro Gallego or San Martiño San Pedro Gallego
It is a Galician fish with white and semi-fatty flesh, although its external appearance is at least peculiar, its interior is a marvel. It inhabits both rocky bottoms and underwater meadows and sandy bottoms, where it can sometimes bury itself. It lives in the water, at depths ranging from 10 to 100 meters, although it can be found up to 400 meters.
It is estimated about 350-450 g. per person (gross weight) where the net ration will be about 200- 250 gr approximately
Its best date to be consumed is around November 11. For this reason in the north of Spain it is known as San Martín
