Flower of salt is the thin layer of salt crystals that form on the surface of the crystallizers in our traditional saltworks. Between the months of April and September, these fragile microcrystals composed of different types of salts are collected daily using manual and artisanal methods, dried in the sun, and then packaged in various containers for the market. It is a 100% natural product, without any type of treatment or additives.
This type of salt is characterized by its high content of Magnesium Chloride and Potassium, which accentuates and intensifies the flavor of food. Similarly, due to its marine origin and special crystallization, flower of salt (fleur de sel) contains 80% of the necessary trace elements that our body needs, so we can say that a diet with flower of salt is a healthy way to avoid having to supplement our diet with mineral supplements.
TRADITIONAL SALTWORKS
In these traditional saltworks, we obtain our flower of salt (fleur de sel). The saltworks consist of deposits formed in the sand that are gradually flooded by seawater, which is constantly subjected to strict analytical controls during production.
In the evaporation process, only two 100% natural factors are involved: the action of the sun and the wind. This is why the harvest of Flower of Salt always takes place between the months of April and September, unlike common sea salt. Our flower of salt is rich in taste nuances and is nutritionally healthy, as its sodium chloride content is clearly lower.
Another added value in flower salt is its high content of trace elements and essential minerals such as magnesium and potassium, among others, which make it a gourmet salt.
HARVEST
Crystallization occurs at dusk due to the cooling of the brine, promoting the crystallization of small salt crystals rich in magnesium and potassium, which remain on the surface forming a thin membrane of tiny salt crystals.
The flower of salt is harvested manually and does not go through any industrial process. The collection is carried out every day when the weather conditions are ideal for the product, sunny day, high temperature, and little wind. If not harvested, the grain would sink to the bottom of the pool once crystallized and lose its properties. A special shovel "lousse" is used for harvesting. It is left to dry in the sun and wind to obtain a pure product, without additives but with very limited production. No matter how much time passes, it does not clump together and maintains its properties intact.
HEALTH
Flower of salt is the healthiest salt as it is the lowest in sodium chloride.
Its high richness in minerals existing and dissolved in seawater, and especially its high content of magnesium chloride and potassium chloride, accentuates and intensifies the flavor of food.
