Dressed in its NATURAL rind, without the addition of colorants or other substances foreign to the product itself, our Manchego Artesano D.O. SEMICURED “La Jaraba” cheese is made with raw milk from authentic Manchego sheep from our own livestock. With a minimum maturation of 3 months and subsequent ripening according to size, the SEMICURED “La Jaraba” is characterized by its great creaminess with consistency and firmness, homogeneous texture with barely any eyes (very small and not evenly distributed on the surface, a sign of quality in production), ivory color, gentle aroma, and a palate marked by persistence and developed but not strong flavor, pleasant and slightly smooth, characteristic of a high-quality semicured cheese.
To fully appreciate the aroma and flavor of this cheese, we recommend storing it in a cool, dry place between 4ºC-8ºC, and letting the cheese sit at room temperature for approximately 40 minutes before tasting.
