The harvest selection is created when the olives reach their perfect maturity. Early in the morning, with the light of dawn, the harvesting begins. In less than 8 hours, the fruit is at the mill, where it is milled at 24 ºC, maintaining freshness and stability.
The result is a 100% organic AOVE, Picual variety, with a balanced character: medium green fruitiness, notes of grass, tomato, and almond, and a mild bitterness and spiciness that make it ideal for both raw use and gourmet cooking.
Produced under the supervision of Eduardo Ruiz, in charge of the field and harvest, the selection is the expression of balance and care for the olive grove, from the beginning to the end of the process.
