Severac Cadet is produced and matured between 2 and 3 months in a cellar in Cantal. This short maturing period gives it a supple texture, a soft, fresh and milky taste. Its fine, light, freshly formed rind gives way to an ivory-coloured, supple and delicate paste with a milky taste and a touch of hazelnut. The number on the rind is the production date, which indicates the day of production and thus allows you to know the exact maturation period of each cheese.
