The Palo Cortado Leonor Wine is made with 100% Palomino Fino grapes, and has a D.O. Jerez.
Bodegas González Byass was founded in 1835, currently owning 1,844 hectares of vineyards spread throughout Spain, and their wine production satisfies both national and international palates.
Bodegas González Byass rescues sherries from inside their wineries, "infinite in age but finite in life."
The harvest that takes place in the “Marco de Jerez” is of utmost importance for the production of Palo Cortado Leonor Wine since autumn and winter in this area are mild, while spring is characterized by high temperatures and flowering. In the summer, there is not excessive heat, but there are multiple days of dew favoring a bountiful production, so the harvest begins in August.
The Palomino grapes are gently pressed, and the resulting must from this first pressing is known as “yema must,” being the most delicate and elegant.
After fermentation, classification, and fortification of the wine, it enters the “solera,” where it will age for approximately 12 years in American oak barrels.
Sherry wine ages by being in direct contact with air, allowing for complete oxidation and resulting in the most delicious and delicate Palo Cortado Leonor Wine.
