The D.O. Manchego cheese curado Adiano (wedge) is a cheese that has a designation of origin and is handcrafted from raw milk of purebred Manchega sheep, which graze on the pastures of the El Campillo estate (Ciudad Real) at the foot of the Toledo mountains.
The artisan D.O. Manchego cheese Adiano has become the most awarded in the country during the World Cheese Awards 2024, held in Portugal, having achieved three Super Gold medals in a single competition. In the previous edition of the WCA, held in Wales, it won the Gold medal.
Specifically, in this new edition of the World Cheese Awards, it has achieved: Best semi-hard sheep cheese in the world, Best sheep cheese for the Reserva version, and Adiano Afinado was distinguished as the best Manchego cheese DOP in the world. Adiano has already amassed over 30 awards since its launch in 2022.
This is a cured cheese made from unpasteurized sheep milk, without additives or preservatives, which matures in its own mold, ensuring that its completely natural rind is 100% edible.
This artisan D.O. Manchego cured cheese Adiano boasts exceptional quality, and its organoleptic qualities, which preserve natural ferments, give it flavor and aroma nuances that stand out in its category.
All the sheep on the farm enjoy a semi-free state where they alternate daily between grazing in the fields, playing, sunbathing, or resting. The barns where they rest have been designed with the latest available technology focused on animal welfare (Animal Welfair™), where they are milked or spend the night to shelter from the elements.
Additionally, the cheese factory has a waste treatment plant that minimizes the impact and ecological footprint, thus contributing to achieving a 100% sustainable brand.
We recommend pairing this cured Adiano cheese with red wines from La Mancha, as its robust notes perfectly complement the intensity of this artisan Manchego cheese.
If a lighter experience is preferred, white wines or craft beer enhance the flavor of the artisan Manchego cheese, and in terms of culinary recommendations, this cheese can be incorporated into risottos and tarts, resulting in a gastronomic masterpiece.
