Manzanilla aged on the basis of ÁS de Mirabrás 2019, although the vintage is not certified by the CRDO.The butts have been aged separately to analyze their evolution without combination between them. It is ten butts per solera in famous La Arboledilla cellar, the largest of the Barbadillo winery, of which five have been emptied, and bottling without filtering.It is a young Manzanilla of static aging, where the veil has done a light job, providing aromatic complexity and sharpness in the mouth, but without reaching the standards of a biological one in criaderas and soleras. It is a Manzanilla with the soul of a white wine, andthere are currently two more vintages in La Arboledilla. In these cases the butts have been sealed by the CRDO. The reason why the first vintage was not certified is that it was initially an experiment. The results obtained with 2019 have helped to make decisions regarding subsequent years. In 2020 and 2021, for example, the winery has decided to take advantage of the periodic false sacas to blend the butts together, so as to achieve a more homogeneous evolution of the whole, without the differences between butts that have been seen in 2019.2019 is thus a unique project and irrepetible.Producción limited to 2500 Bottles.
