The grapes used in the production of Haus Klosterberg Riesling come from different vineyards owned by Markus Molitor, mainly composed of slate soils. These vineyards produce fresh and mineral wines. The 100% healthy grapes are gently pressed and macerated for several hours with their aromatic skins. After maceration, the juice is fermented by natural yeasts in stainless steel tanks and large wooden barrels. Fermentation is followed by aging on lees, which produces a fruity and well-balanced wine.
