Elaboration and aging
Marqués de Cáceres Crianza is made from the Tempranillo (85%), Graciano, and Garnacha tinta (15%) grape varieties. After the selection of the grapes, the woody part is separated to avoid herbaceous flavors, and the must with the skins is introduced into stainless steel tanks to undergo fermentation. During this process, pumping over is carried out and the grape skins are extracted. The temperature is 25ºC. The second fermentation is carried out to transform malic acid into lactic acid, resulting in a significant modification of the organoleptic character of the wine.
The wine remains in French oak barrels (60%) and American oak barrels (50%) for 12 months, and then in the bottle for 10-12 months.
Tasting notes of Marqués de Cáceres Crianza
- Appearance: Marqués de Cáceres Crianza has a deep ruby color.
- Nose: Aromas of red fruits with freshness enveloped in a background of vanilla and sweet spices.
- Palate: The palate is lively and direct, with mature tannins melting into a structure that shows great harmony. It is fleshy and full of flavors, guaranteeing pleasure at all times.
Pairing
Marqués de Cáceres Crianza is ideal to accompany Mediterranean cuisine, fried foods, grilled vegetables, legumes, paella, rice dishes, pasta, fish in tomato sauce, ham and chorizo, pâtés, roasted, stewed or grilled meats, soft or semi-cured cheeses. Serving temperature: 16-18ºC.
