This goat milk cheese, originating from southern Poitou (south of Deux-Sèvres, Vienne, Charente and Charente-Maritime), is ripened on a plane or chestnut leaf, according to tradition. This gives it a natural moisture, a fine rind, and a creamy texture at its core.
Mothais sur Feuille seduces with its aromatic balance, slightly goaty without excess, and its creamy almost melting texture. Its rustic appearance, with the leaf marking its rind, makes it a true character piece.
Milk: raw or thermized goat milk depending on production
Type: soft cheese with natural rind
Ripening: on chestnut or plane leaf
Texture: melting, moist, creamy
Taste: mild, balanced goaty, woody notes
Weight: between 150g and 200g depending on ripening
Perfect on a platter with walnut or cereal bread
Pairs very well with a dry white wine (Sauvignon, Sancerre, Muscadet)
Can also be incorporated into a gourmet salad with dried fruits and honey
To be stored in the coldest part of the refrigerator (between 4 and 6°C).
