The Cava Ondarre Brut Millennium from Grupo Bodegas Olarra , presents us with this Cava from D.O Cava (Spain) made with the Viura grape variety.
Elaboration
For the elaboration of this Cava Ondarre Brut Millennium an early harvest is carried out to ensure finesse and elegance in the base wine. Once in the winery, the wine is made in stainless steel tanks using selected yeasts for their aromatic power and controlling the temperature between 14 and 16 degrees.
For the second fermentation in the bottle it is carried out with selected yeasts, ensuring that the temperatures do not exceed 15 degrees. After remaining between 10 to 11 months in riddling, the disgorging is carried out.
