This is a white wine made from Verdejo and Sauvignon Blanc
Its ageing on lees allows the wine to improve. The lees are mainly yeasts that are in charge of making the alcoholic fermentation and, when they finish their activity, they die and decompose, which causes the appearance of mannoproteins, which improve the characteristics of the wine.
Among other advantages, ageing on the lees softens the astringency of the wine, brings out new aromas, increases the sensation of volume perceived in the mouth and protects the wine from oxidation, as the lees consume oxygen.
Drinking this white Ciento Volando you will enjoy aromas of ripe tropical white fruit. It is a smooth, fresh, light wine with a persistent and pleasant finish.
