The Borges Tawny Port Wine is a standout example from the classic range of Borges Port Wines, combining a fruity profile with a traditional style that already shows some evolution. This wine belongs to a batch with 6/7 years in its mid-age, which gives it unique characteristics.
Made with grape varieties typical of the Douro Demarcated Region, such as Touriga-Franca, Touriga-Nacional, Tinta-Barroca, Tinto-Cão, and Tinta-Roriz, the winemaking process begins with the crushing and destemming of the grapes, followed by a 3 to 4-day fermentation with the skins immersed in regular pump-overs to extract color and aromas.
Subsequently, the skins are separated from the must, and vinous brandy at 77% v/v is added to achieve an alcohol content of 19% and between 90 and 120 g/l of reducing sugars specific to the grape. Aging is carried out in small capacity casks and wooden barrels, allowing the wine to develop its complexity and character over time.
