Elaboration and aging

Organistrum is a white wine made with the Albariño grape variety. The grapes come from vineyards in southwest-facing parcels.

It undergoes fermentation in French oak barrels from Allier. During the first 45 days, battonage is applied, and then it remains in steel tanks for 8 months, which ensures good integration of the wine.
