Pago de los Capellanes Reserva is a red wine made with 100% Tempranillo. It was chosen in its 2007 vintage as the best wine from Ribera del Duero by Decanter magazine.

Pago de los Capellanes Reserva is a single-varietal Tempranillo. After a selected harvest, it is transported in 15-kilogram crates and then taken to 20,000-liter tanks for fermentation.
Pre-fermentation at low temperatures for 6 days, followed by 20 days of alcoholic fermentation using selected native yeasts from the best vines. Malolactic fermentation occurs very slowly, with the cellar being kept at 20ºC for 28 days, without the addition of bacteria.
The wine rests for 14 months in new French oak barrels with a fine grain.
Pago de los Capellanes Reserva is ideal to accompany suckling pig with roasted potatoes, pochas with lamb, and grilled beef tenderloin.
It is recommended to decant before consuming. Consume this wine at a temperature between 16 and 18ºC.
