Pago de los Capellanes Finca El Picón is a single varietal Tempranillo red wine made by the Pago de los Capellanes winery at D.O. Ribera del Duero, Spain. Wine & Spirits magazine included Pago de los Capellanes among the 100 best wineries in the world; a proof of the excellent international reputation that with hard work and quality has earned this estate that was born as a family winery in Pedrosa de Duero, Burgos, and is one of the most recognized winemakers in today's wine scene.The word "Pago" refers to a delimited district of land, especially vineyards or olive groves. This particular one had belonged to the town's chaplains in the 14th century, hence the origin of its name: Pago de los Capellanes.Among its plots there are two that, due to their characteristics, offer unique wines of extraordinary quality, which are the product of low-yield agriculture and work full of patience and dedication, such as this Pago de los Capellanes Finca El Picón, which is born from vines planted on clay loam soils with gravel and which are influenced by a climate with great contrasts in temperature between day and night that favor ripening, enhance the alcohol content, color, tannins and maintain a very balanced acidity. These plots are harvested in a selected manner, in boxes of 15 kg.Cuando the clusters arrive at the winery and are left to rest in cold storage for 24 hours before being processed in order to preserve their best characteristics. The grapes ferment in French oak vats at a controlled temperature to obtain their maximum expression. This fermentation is activated with a foot of vat that is made with selected yeasts in the own parcela.Luego of 40 days the wine is devatted by bleeding to start the malolactic fermentation that takes place for 32 days in French oak barrels and without addition of bacteria. The wine is then aged for 22 months in selected grain French oak barrels.
