Based in Beaune, Philippe Pacalet is an independent winemaker who launched his own label in 2001. He produces approximately 30 different cuvées, which are known to be quite distinctive, with great purity and exciting aromas.
This particular release is from Ladoix, an appellation belonging to the village of Ladoix-Serrigny, located at the northern end of the Côte de Beaune.
The grapes ferment alcoholically in wood with indigenous yeasts, remain on their lees for about 13 months and are then bottled.
Straw yellow colour with golden reflections. On the nose a bouquet with aromas of white fruits. On the palate it is a structured, persistent wine with a pleasantly mineral finish. Excellent with grilled fish, roast pork, poultry and mild cheeses.
