The Sirena del Maar Barrel Fermented Rosé Wine from Encomienda de Cervera, presents us with this organic rosé wine IGP Campo de Calatrava (Spain) made from 100% Syrah grapes. Aged for 3 months in barrels.
"Legend has it that the winds that pass through the top of the Volcano gently sway the vineyards, giving a special flavor to their grapes. They even make their branches sound in the wind, allowing the song of the Siren to be heard from the top of our Maar."

The Encomienda de Cervera Estate is located in the heart of the Volcanic Massif of Campo de Calatrava, at an altitude between 750 and 850 meters above sea level, in the area of the noble and cultural city of Almagro. It is bordered by the Sierra de Arzollar, the Cañada Real Soriana, between valleys and mountains with a high density of holm oaks and junipers, rosemary, thyme, etc. Here, you can distinguish the black volcanic soils, the red soils (Almagre) which, according to some historians, gave the name to the city of Almagro, and the limestone and stony soils.
All this, under the watchful eye of the Maar Volcano of the Hoya de Cervera, declared a Natural Monument in 1999, and the calm waters of one of the main tributaries of the Guadiana River, the Jabalón River.
The rugged topography, which shapes its three rainwater basins, offers a peculiar microclimate, with cool nights that compensate for the daytime sun exposure.
