Red Wine San CucufateMonastery from Bodegas San Cobate, belongs to the Ribera del Duero D.O. and is made with 100% Tinto Fino grape variety.
Located in Gumiel del Mercado (Burgos) at over 860 meters above sea level. South-facing slope (1.6 hectares), with north-south planting orientation. It is a vineyard surrounded and protected by oaks and local vegetation. The soil is calcareous clay, very poor due to erosion from the slope, and in the highest area the limestone mother rock emerges.
Winemaking and Aging
The elaboration is carried out by carefully selecting the clusters in the vineyard, in the winery they are destemmed and the grapes are gently crushed, keeping a small part of the whole clusters to start the alcoholic fermentation in cement tanks with daily pump-overs. The malolactic fermentation is done in the same tanks.
The goal is to obtain wines with great varietal expression that then begin aging in barrels of various uses and finally age in larger wooden tanks seeking to achieve a slow aging that offers us a wide, powerful and intense wine. It was bottled on May 21, 2019.
