The Valderroa Carballo Red Wine from Bodega Valdesil presents us with this Red Wine from D.O Valdeorras (Spain) made from the Mencía grape variety.
This wine is made from a selection of Mencía grapes from the oldest vineyard plots in Carballeda de Valdeorras. The black slate soils and aging in oak deliver a balsamic, spicy red wine with a mineral touch.
The vineyards are distributed in ''Pezas'' or plots with slopes of up to 45% and north exposure, cultivated in goblet shape at an altitude between 600 and 800 meters above sea level, in the Carballeda de Valdeorras area.
The vines are between 60 and 105 years old, characterized by having colluvial soil derived from the weathering of black slate rock.
As for the climate, it is a humid Mediterranean climate with a continental tendency, with temperatures and rainfall staggered.
On the other hand, the harvest is done manually. It also undergoes cold pre-fermentation maceration for 3 days. Fermentation and maceration in used barrels without a lid and manual ''punch down'' for 15 days. Malolactic fermentation also takes place in barrels.
It is aged for 9 months in used French oak barrels of 225-liter capacity.
The recommended serving temperature is 16 ºC. It also needs a few minutes of aeration to show its full potential.
It is recommended to consume by 2022, approximately, of course, if it is stored in optimal conditions.
