Pieces of approximately 3,000g. 24 servings of 125g.
Fresh pork ham and Soberano brandy from Bodegas González-Byass.
While you decide when to savor it, keep it in the fridge between 0ºC and 4ºC and consume it before the expiration date.
In the oven covered with aluminum foil at 180ºC, 120 min until the heat penetrates the inside (it is cooked and it would not hurt if served warm). Remove the foil and brown at 180ºC for 30 min or to taste, until golden brown.
Then you will need to carve it and take slices of the size required by the diners. But that's at the table, after presenting it.
It is best to present it in a large glazed clay dish, those traditional containers that were used in the past.
It is ideal to accompany it with our onion brandy sauce. And if you mix it with the meat juices and reduce it, even better. To top it off, make some good "poor man's potatoes."

More information:We couldn't help but make this great roast. Without much fuss, we can feed 20 people and amaze them.Traditional cooking was slow and each dish had its time, in the case of meats it was common to leave them marinating in wine for at least 24 hours to tenderize the meat and give it flavor and aroma.In our case, we have chosen brandy for this roast.Then it will spend the whole night roasting peacefully, ensuring it remains very tender and juicy.
