TASTING
In the mouth, it is very balanced with a medium-low bitterness and a more intense spiciness. It is one of the most stable varieties with a higher proportion of oleic acid known, which gives it nobility and flavor. Its stability makes it very resistant to rancidity.
PAIRING
Recommended for daily use in our kitchen for seasoning, frying, preserving or confit. Ideal for cooking and preparations where the flavor of the oil stands out. Its performance is much higher than other vegetable fats, cold or hot, as less quantity is needed due to the intensity of its raw aroma and volume increases when heated, retaining better dietary properties than other fats.
