This is Spring salt, collected in the salt flats of Saelices de la Sal (Guadalajara) and therefore is free of microplastics and heavy metals that are becoming more common in marine waters.
The flower of salt is a thin layer of salt that forms on the surface of the salt flats, due to the thermal contrast between the temperature of the day and night, caused by the cooling of the brine that reduces its solubility and promotes the massive precipitation (crystallization) of small crystals of salt rich in magnesium and fluorine which, due to the lower density than the brine, remain on the surface forming a thin membrane of tiny salt crystals.
Due to its gastronomic and organoleptic value, this salt is considered the ultimate "gourmet" salt. It is harvested using very traditional and artisanal techniques.
